You just need to make sure that you do not over-bake it our it could get less creamy, which is never good, so keep an eye on your oven! And I am the same way, at our Friendsgiving this weekend, I made three pies for 6 people... the red velvet crack pie, a "cracked out" pecan pie, & a "Forrest Gump" Tart. The tart was the winner for the night, so I will be posting that in the next week! But, the corn powder is a unique ingredient and cannot be substituted with cornstarch. I have used corn powder + corn flour, which I bought at a Whole Foods by Bob's Red Mill. That company carries a lot of different kinds of flours and grains that I just love! Hopefully you can find it because it also will be featured in my recipe for the "cracked out" pecan pie! I can just picture ...This looks and sounds devine!! I can just picture it in my mind on the Christmas dessert table, ( yes, I have a WHOLE table devoted to just desserts!) In the ingredients it calls for corn powder, is that the same as cornstarch? Just checking before I make this beauty, I don't want to mess it up.
