Triple Citrus Sorbet Margaritas

So yesterday, Mountain Man had the whole day off. It was so exciting because we used to go to Sunday Brunch every weekend, but we haven't been able to recently because of his schedule. So we got all dolled up and went downtown to Rocks on the River for Brunch. The menu has their different takes on Eggs Benedict... I mean they literally have like 15 different kinds. It's soooo hard to pick. We shared their famous Chicken & Waffle Sliders (that we have gotten before and love) as an appetizer, and then I ended up getting the Shrimp & Grits Eggs Benedict and Mountain Man got the Benedict Burger for our meals. Everything was great... I just love those sliders :) After brunch we decided to head out to the park with some white wine sangria and let Weezy run around and play. Unfortunately, it started pouring about 30 minutes into our picnic, so we had to call the day short, and instead, we had a movie marathon on the couch until dinner time. So once the rain went away, we ended up enjoying some Triple Citrus Sorbet Margaritas in the garden for happy hour. We both really loved these margaritas, but maybe that's because we love us some alcohol :) I wouldn't recommend making these sorbets just too eat because the lemon & lime are quite tart, while the orange sorbet is quite sweet. But, that's exactly how I wanted it, so it would be able to stand up to the strong tequila flavor. The beauty of these margaritas are that there is no ice in them, which means no watered-down cocktail (which is the death sentence in all mixed drinks). The sorbet acts as ice to keep the drink cool while you drink it, but as it melts it turns into a regular ole' margarita on the rocks. All you really have to do to make these margaritas is scoop a little bit of each of the homemade sorbets (lemon, lime, & orange) into a salt-rimmed glass, and pour over 2-3 shots of tequila. Yes, I realize 2-3 shots sounds like quite a bit of alcohol, but because the sorbets are so strong in flavor, it was actually quite balanced, and I didn't taste the alcohol at all. You could always make these sorbets as well and add them into a blender along with tequila and some ice to make your typical frozen drink, but just a tad smoother & not as icy. I can't wait to enjoy one of these babies again once my Mountain Man gets off work :)

Enjoyin' the Margaritas in the Garden



Triple Citrus Sorbet Margaritas 
For the Lemon Sorbet:
1C Water
1C Sugar
1C Fresh Lemon Juice
1T Lemon Zest
Yellow Food Coloring (to your liking)

For the Lime Sorbet:
1C Water
1C Sugar
1C Fresh Lime Juice
1T Lime Zest
Green Food Coloring (to your liking)

For the Orange Sorbet:
1C Water
1C Sugar
1C Fresh Orange Juice
1T Orange Zest
Orange Food Coloring (to your liking)

Directions:
1. To Make the Lemon Sorbet: Bring the water and sugar to a boil in a small saucepan, remove from the heat and cool. Combine the syrup with the lemon juice, yellow food coloring, and zest, and then pour into your ice cream maker. Freeze the sorbet according to the manufacturer’s instructions. After the sorbet is made, transfer to an airtight container. Cover tightly and freeze until ready to serve (at least 4 hours).
2. To Make the Lime Sorbet: Bring the water and sugar to a boil in a small saucepan, remove from the heat and cool. Combine the syrup with the limejuice, green food coloring, and zest, and then pour into your ice cream maker. Freeze the sorbet according to the manufacturer’s instructions. After the sorbet is made, transfer to an airtight container. Cover tightly and freeze until ready to serve (at least 4 hours).
3. To Make the Orange Sorbet: Bring the water and sugar to a boil in a small saucepan, remove from the heat and cool. Combine the syrup with the orange juice, orange food coloring, and zest, and then pour into your ice cream maker. Freeze the sorbet according to the manufacturer’s instructions. After the sorbet is made, transfer to an airtight container. Cover tightly and freeze until ready to serve (at least 4 hours).
4. To Make the Triple Citrus Sorbet Margaritas: Once all of the sorbets have frozen, using an ice cream scoop, scoop all the different kinds of sorbet into a salt-rimmed glass. After you have filled your glass with the triple citrus sorbets, pour 2-3 shots of tequila over the sorbet. Let the sorbet start to slightly melt before enjoying!
