Red Velvet Cake Truffles with Cheesecake Filling

When I'm planning out a menu of recipes to make for gameday, I always want to make food that doesn't require me to be in the kitchen the whole time instead of watchin' the game. These cake truffles are so easy to make, and you can make them a day ahead and just pull them out when you are ready to serve them! I decided to make red velvet cake truffles because obviously red velvet is one of my favorites and because they are festive (UGA colors are red, black, & white). They are also perfect because they are hand-held and don't require a plate or fork, which is always a plus as well! The only difference between these cake truffles and others, is that I cut up pieces of cheesecake and stuffed them into the center of the truffle. So, when you bite into it, you get a little center of cream cheese that is similar to cream cheese frosting. Enjoy :)

Red Velvet Cake Truffes with Cheesecake Filling
Yummy Cheesecake Filling :)
For the Truffles:
1 Box of Red Velvet Cake Mix
1 ¼C Water
1/3C Vegetable Oil
3 Eggs
1 Can of Cream Cheese Frosting
1 Bag of White Chocolate Chips, Melted
2 Slices of Cheesecake, Crust Removed & Cut into Teaspoon-Sized Pieces
Sprinkles, For Decoration

Directions:
1. Bake the Cake: Preheat the oven to 325 and spray a 13x9-baking dish with Pam, and set aside. Beat together the cake mix, water, oil, and eggs until well incorporated. Pour this into the prepared baking dish. Bake for 30 minutes.
2. Once the cake is done baking, let it cool completely and then crumble. Add the cake crumbles into a mixing bowl and mix together with the can of cream cheese frosting until thoroughly incorporated.
3. To Make the Cake Truffles: Once mixed, roll into balls, making a well in the center of the ball to add the piece of cheesecake. Once you have added in the cheesecake add more cake on top and roll into a round ball. Place onto a baking sheet and chill them in the refrigerator until they are chilled & completely set. Once chilled, dip them into the melted white chocolate until the cake is covered. Place them back onto the baking sheet, sprinkle with some chocolate sprinkles, and let the chocolate harden.
4. Place in the refrigerator until ready to eat!
