Spicy Mexican Chocolate Silk Pie with Vanilla Bean Pâte Brisée , Salty Cajeta + Cajeta Infused Whipped Cream

Although it’s St. Patrick’s Day… I’m going way out-of-bounds and heading to a completely different area of the world… Mexico. Well, and America, too. Who doesn’t love chocolate? Everyone does. And chocolate pie, well it takes the cake (or pie) for me. This is a traditional recipe turned up a notch by taking Chocolate Silk Pie and making it spicy. It might sound crazy and a little insane, but bare with me a little bit as I explain it. I don’t know if y’all have been to (or heard of) Jeni’s Splendid Ice Cream, but we sure have. She recently opened up a shop in Atlanta and we nearly go every week. Our favorite flavors are her salty caramel, queen city cayenne, and the buckeye state. So, I took inspiration from two of those to make a pie. Chocolate Silk Pie is great on its’ own, don’t get me wrong. It’s luscious, smooth, and so-wrong-its-right in every kinda way. But why not make it spicy? You truly haven’t lived if you haven’t experienced Mexican chocolate or any spiced chocolate for that matter. So instead of using unsweetened chocolate, I bought some Taza Spicy Mexican Chocolate Discs and added some spices into the pie filling. It warms you deep into your bones and your soul, and well heats your mouth up a bit, but we like that, a lot. The whole thing is put into a pre-baked pie crust, I use my own recipe, but you could easily just do a store-bought crust to save time and effort. But the secret ingredient to this blissful pie is the Cajeta component. Cajeta is a thick Mexican caramel made with goat’s milk, very similar to a can of caramelized, sweetened condensed milk. But wayyyyyy better. We found our Cajeta at Whole Foods; however, you surely can make your own at home. We spread the Cajeta into the bottom of the pre-baked pie crust, so that there was a luscious layer of caramel with every bite. And shhh, we sprinkled a tad bit of sea salt on top to make it a salty Cajeta (and it was so yummy). Then we took it another step forward and infused our whipped cream topping with more Cajeta because, well, why the hell not? It’s practically a Cajeta party, YAY. The pie is finished with just some more of that fabulous spicy chocolate grated over the top. And you, my friend, will be in paradise along with us. You won’t regret making this pie, y’all, you just won’t!! Enjoy :)

For the Vanilla Bean Pâte Brisée:
3 ¾C AP Flour (plus extra for rolling)
3 Sticks of butter, Cut into ½inch Cubes & Chilled
1 ½t Salt
1T + 1 ½t Sugar
12-18T Ice Water, Very Cold
3 Vanilla Beans, Sliced & Scraped for Beans
For the Cajeta-Infused Whipped Cream:
2C Heavy Cream
¼C Sugar
½C Cajeta (we purchased some at whole foods)
Pinch of Salt (or to taste)
1t Vanilla

For the Mexican Chocolate Silk Pie:
4oz Spicy Mexican Chocolate, Chopped (we used Taza Chocolate Discs)
1C Salted Butter, Softened
1 ½C Sugar
½t Chili Powder, Cinnamon & Paprika (and a pinch of a cayenne)
4 Whole Eggs
½C Cajeta (to spread in the base of the pie shell)
Pre-Baked Vanilla Bean Pâte Brisée, Cooled

Directions:
1. For the Vanilla Bean Pâte Brisée: Start by cutting the sticks of butter into ½inch cubes and placing in the freezer bag, along with the flour, salt, and sugar. Place the bag of flour into the freezer and chill for at least 1-2 hours. In a food processor, pour the frozen flour bag in, as well as the scraped vanilla beans, and pulse 6-8 times until the mixture resembles a course meal, with pea size pieces of butter. Add water 1T at a time, pulsing until the mixture just begins to clump together. If you pinch of some of the crumbly dough and it holds together then it’s ready. Remove the dough from the machine and place on a clean surface. Carefully split the dough into three equal pieces and shape into discs (save the other two rounds of pie dough in plastic wrap and freeze them for a rainy day). Do not over knead the dough. You should still be able to see little bits of butter in the dough. Sprinkle the discs with a little flour on all sides and wrap it in plastic wrap and refrigerate at least an hour. Remove one of the discs from the refrigerator and let it sit at room temperature for 5-10 minutes. Sprinkle some flour on top of the disk. Roll out with a rolling pin on a lightly floured surface to a 12inch circle (1/8inch thick). Place the rolled out disc on to a pie dish, lining up the fold with the center of the pan, trimming the excess. Cover with plastic wrap and freeze for 30 minutes.
2. For the Cajeta-Infused Whipped Cream: The night before you make the pie, heat a small pot over medium-low heat. Add in the heavy cream, sugar, cajeta, & a pinch of salt to taste and whisk constantly until the cajeta has dissolved into the cream and has become smooth (it should be a light khaki color). Remove the heat from the pan and add vanilla extract. Pour cajeta-infused cream into and container and let it chill overnight. Firstly, make sure the cream is thoroughly chilled. Add it into the bowl of a standing mixer, fitted with the whisk attachment, and whip on high-speed until a fluffy, yet thick whipped cream. Season it with some sugar, vanilla extract, and salt if needed (really it’s up to your tastes).
3.  For the Mexican Chocolate Silk Pie: In small microwave safe bowl melt 4 ounces of the Mexican spicy chocolate until you can stir it (about 45 seconds on high). Set aside to cool. In a large bowl with an electric mixer beat 1 cup (2 sticks) of regular (salted) butter, spices, and 1½C of white sugar until fluffy (about 1 to 2 minutes). When melted chocolate is cooled, drizzle it over the butter/sugar mixture. Add 1 teaspoon of vanilla extract. Beat the mixture thoroughly until combined (on a Kitchen Aid mixer, you will be using the whisk attachment). Turn your mixer to a medium speed and over a period of 15 to 20 minutes add in the four eggs, one at a time, leaving about 5 minutes between each egg addition. Prepare your pie by spreading some of the Cajeta into the base of the pie shell, so that you will have a nice, thick layer of Cajeta when you slice & bite into a slice (and sprinkle a little fleur de sel on top). Once the pie filling is well mixed, pour it into the baked & Cajeta-filled pie shell, scraping every last speck of it out of the bowl. Smooth out the pie filling and place pie in the refrigerator to chill for at least two hours (preferably longer). Plop a heaping mound of Cajeta-infused whipped cream on top of the pie, smoothing it out so it completely covers the chocolate.
4.  Serving the Pie: Cut a slice of the pie and grate some more Mexican spicy chocolate on top and enjoy!

I feel like I have been so busy lately. Wedding planning has taken over my life... and to top all of that, I found out that I have Shingles again. I have literally had it twice in less than 10 months. Kill me now. What 25 year old has something that 60 year old's get? Me. That's who. But you know what cheers me up when I don't feel good? Ice cream. Cool, creamy, dreamy ice cream. And one of my favorite flavors has to be salted caramel. Matter of fact, triple the salted caramel ice cream. It starts off with a salted butter caramel custard base, and then cluttered with even more caramel-y goodness. I mean, who doesn't like praline? It's like crunchy caramel. It's perfection. The praline bits give the ice cream some crunch + texture, which I adore. And then there's the bourbon caramel sauce that is swirled in as well, which makes it even more luscious. I can't even tell you all the millions of reasons as to why you need to make this right-friggin'-now. Summer is coming to an end in about a month and you can't miss out on this treat before it starts to get cold. My favorite element of the whole dessert though... are these fabulous Pretzel Ice Cream Cones. You have to order them online, but trust me, they are so worth the purchase! Head over to Pennsylvania General Store to get you some gurrrllllll (or guys). When you open the packaging, the most intoxicating maple-like smell wafts through your nose. But then when you bite into it tastes like a LEGIT PRETZEL. No joking here. This has to be the most ingenious idea ever. So go buy some now because I'm pretty sure it would pair beautifully with any ice cream you have in your freezer!! Enjoy :)



For the Praline Bits:
½C Sugar
¾t Smoked Sea Salt (I prefer Maldon)

For the Bourbon Caramel Swirls:
1C Sugar + ¼C Water
½C Heavy Cream
1T Bourbon
Heavy Pinch of Smoked Sea Salt 

For the Salted Butter Caramel Ice Cream Custard:
2C Whole Milk, Divided
1 ½C Sugar
4t Salted Butter
½t Smoked Sea Salt
1C Heavy Cream
5 Large Egg Yolks
1t Vanilla
1T Bourbon

Directions:
1. For the Praline Bits: Spread the sugar in an even layer in a medium-sized, unlined heavy saucepan; I use a 6-quart pan. Line a baking sheet with a silpat. Heat the sugar over medium heat until the edges begin to melt. Use a heatproof utensil to gently stir the liquefied sugar from the bottom and edges towards the center, stirring, until all the sugar is dissolved (or most of it-there may be some lumps, which will melt later). Continue to cook stirring infrequently until the caramel starts smoking and begins to smell like it’s just about to burn. It won’t take long. Without hesitation, sprinkle in the ¾ teaspoon salt without stirring (don’t even pause to scratch your nose), then pour the caramel onto the prepared baking sheet and lift up the baking sheet immediately, tilting and swirling it almost vertically to encourage the caramel to form as thin a layer as possible. Set aside to harden and cool.
2. For the Bourbon Caramel Sauce: Simmer sugar and ¼ cup water on medium heat, swirling pan (NOT stirring) for about 15 minutes, or until a deep amber color is reached. Then turn off burner, remove from heat and slowly add in cream while stirring. Add pinch of salt and bourbon and place back on still-warm burner for another minute while stirring. Transfer to a heat-safe dish or bottle and let cool. Store covered in the refrigerator, and bring to room temperature or heat in a warm water bath before using (if needed).
3. For the Salted Butter Caramel Ice Cream: Make an ice bath by filling a large bowl about a third full with ice cubes and adding a cup or so of water so they’re floating. Nest a smaller metal bowl (at least 2 quarts) over the ice, pour 1 cup of the milk into the inner bowl, and rest a mesh strainer on top of it. Spread 1½ cups sugar in the saucepan in an even layer. Cook over moderate heat, until caramelized, using the same method described in the praline bit process. Once caramelized, remove from heat and stir in the butter and salt, until butter is melted, then gradually whisk in the cream, stirring as you go. The caramel may harden and seize, but return it to the heat and continue to stir over low heat until any hard caramel is melted. Stir in 1 cup of the milk. Whisk the yolks in a small bowl and gradually pour some of the warm caramel mixture over the yolks, stirring constantly. Scrape the warmed yolks back into the saucepan and cook the custard using a heatproof utensil, stirring constantly (scraping the bottom as you stir) until the mixture thickens. If using an instant-read thermometer, it should read 160-170 degrees Fahrenheit. Pour the custard through the strainer into the milk set over the ice bath, add the vanilla, then stir frequently until the mixture is cooled down. Refrigerate at least 8 hours or until thoroughly chilled. Freeze the mixture in your ice cream maker according to the manufacturer’s instructions.
4. Assembling the Ice Cream: While the ice cream is churning, crumble the hardened caramel praline into very little bits, about the size of very large confetti (about ½-inch). As soon as the mixture is done churning, pour or scoop in one-third of the ice cream into a large container, and then spoon some of the bourbon caramel sauce on top of the ice cream. Using the spoon, smooth it out into any even layer and swirl it some for a pretty marbling effect. Scatter in more of the crushed praline during this layering process. Repeat this process until all of the ice cream and caramel sauce (and as much praline bits as you want) have been used. Once it has been assembled, store in the freezer until firm, at least 4 hours.
5. Enjoying your Masterpiece: To take the dessert to a’whole’nother level, scoop your salted butter caramel ice cream into a Pretzel Ice Cream Cone (by The Cone Guys) and enjoy this ultimate salty + sweet treat!

Hey y'all, it's been a superrrrrr long time ((sorry about that)). BUT but but... I have a new recipe today, yay!! I'm usually the first person to turn their nose up towards anything easy or store-bought. However, I have always had a place in my heart for "better than sex cake". You know, that cake where its soaked in sweet condense milk and topped with whipped cream + toffee bits? Well, I always thought to myself, someone should make a gourmet version of this. Thus, I introduce to you my “Better Than” Better Than Sex Cake with Triple Fudge Dark Chocolate Cake, Dulce de Leche Soaking Cream, Toffee Bits, Mascarpone Whipped Cream, Salted Caramel Whipped Cream, Salty Bourbon Caramel Sauce, & Ruffled Potato Chips. It's the perfect balance of sweet + salty. Ya know how?? Through the toffee bits, salty bourbon caramel sauce, & ruffled potato chips. I love love love the addition of potato chups, like fo'real y'all. It might sound super weird, but just go with it, I promise that you'll adore it! I fancied it up a bit by using Dulce de Leche (versus caramel) in multiple components. You can either make this from scratch or buy a good brand from your grocery store (I prefer the La Salamandra brand myself). Now some of y'all might be shocked, but I actually went the cake-box-route, which I absolutely never do. But, I find this type of cake most conducive for the soaking method. Every time I soaked a homemade, high-quality cake... it always turned out grainy + soggy, not moist and de-lush-cious. I will say though, you still make a great cake from box mixes!! I do this buy subbing in some heavy cream and coffee liqueur, and boosting the flavor with pudding, vanilla, and salt. It turns out great every time, AND it takes much less time--yippee!! Don't get too excited though, I have ya busy doing a whole bunch of homemade toppings (sorry about that, it's so worth it in the end). Just promise me one thing... don't leave out the potato chips. Okay? Deal? Deal!! Enjoy :)








For the Salted Caramel Whipped Cream:
1C Heavy Cream
2T Sugar
½C Dulce de Leche 
Pinch of Salt (or to taste)
1t Vanilla

For the Dulce de Leche Soaking Cream:
1 Can of Sweetened, Condensed Milk
1C Dulce de Leche
1t Vanilla + Bourbon
Pinch of Salt

For the Dark Chocolate Cake:
2 Boxes of Triple Fudge Chocolate Cake
1 Box of Dark Chocolate Pudding
1C Vegetable Oil
6 Eggs, Beaten
2C Heavy Cream (or Buttermilk) + 1C Kahlua Coffee Liqueur
1t Vanilla
1t Salt
1 Bag of Heath Bar Toffee Bits
Cape Cod Ruffled Potato Chips, For Topping
Homemade Chocolate Ganache or Chocolate Syrup, For Drizzling

For the Salty Bourbon Caramel Sauce:
1C Sugar + ¼C Water
½C Heavy Cream
1t Smoked Sea Salt
1T Bourbon

For the Mascarpone Whipped Cream:
8oz Mascarpone Cheese
½C Confectioners’ Sugar
Pinch of Salt
1t Vanilla
1 ½C Heavy Whipping Cream

Directions:
1. Prepping for the Salted Caramel Whipped Cream: The night before you make the cake, heat a small pot over medium-low heat. Add in the heavy cream, sugar, dulce de leche, & a pinch of salt to taste and whisk constantly until the dulce de leche has dissolved into the cream and has become smooth (it should be a light khaki color). Remove the heat from the pan and add vanilla extract. Pour this dulce de leche infused cream into and container and let it chill overnight.
2. Firstly, make sure the cream is thoroughly chilled. Add it into the bowl of a standing mixer, fitted with the whisk attachment, and whip on high-speed until a fluffy, yet thick whipped cream. Season it with some sugar, vanilla extract, and salt if needed (really it’s up to your tastes).
3. For the Dulce de Leche Soaking Liquid:  In a saucepan, heat the sweetened condensed milk over medium heat. Add in the dulce de leche and whisk until it has completely melted into the milk. Add in the vanilla, bourbon, and a pinch of salt and whisk until combined. Turn off the heat and continue whisking.
4. For the Dark Chocolate Cake: In the bowl of a standing mixer fitted with the whisk attachment, add the two boxes of cake mix and pudding mix. Quickly add in the vegetable oil, eggs, heavy cream, coffee liqueur, vanilla, and salt. Mix until everything is just combined and a smooth batter is formed. Spray a 9x13 pan with Pam and pour the cake batter into the prepared pan. Bake at 350 degrees for 30-45 minutes until the cake is cooked through, but not overcooked. Let the cake cool for 20-30 minutes, and then using a straw, poke the cake full with holes and pour the slightly warm dulce de leche soaking liquid over the cake evenly. Let it soak for 4 hours before assembling the rest of it.
5. For the Salted Caramel Sauce: In a large saucepan, bring it up to medium-high heat. Pour in sugar and water, and whisk until the sugar begins to melt and the lumps dissolve. Let this simmer until the sugar begins to turn a light caramel color, at this point add in the salt. Finally, take the pan off the heat, and pour in the heavy cream (once again, it will bubble, but just keep stirring) and stir until it is a smooth, consistent sauce. Add in the bourbon and return the caramel to the heat for another minute or so. Pour this caramel into a bowl and set aside.
6. For the Mascarpone Whipped Cream: In a mixing bowl, combine the mascarpone, confectioners’ Sugar, salt, and vanilla. Stir together until smooth and set it aside. In the bowl of an electric mixer, beat the whipping cream until stiff peaks form. And then, gently fold the whipped cream into the mascarpone mixture until combined.
7. Assembling the Cake: Once the cake has cooled & soaked, sprinkle the top of the cake with half of a bag of heath bar toffee bits. Spread the top with mascarpone whipped cream  + salted caramel whipped cream, and then drizzle with the salted caramel bourbon caramel sauce and chocolate ganache (or store bought fudge sauce). Swirl the two sauces together with the two whipped creams. Once again, sprinkle the top with the other half of the bag of toffee bits. Push the ruffled chips into the whipped cream, so that they stay up and the cake has a jagged top. Again, drizzle the top with more salted caramel sauce + chocolate ganache. Place into the refrigerator and chill for 1-2 hours or until you are ready to serve.
8. Cut the cake into square servings and enjoy!!

“Forrest Gump” Chocolate Tart on a Pretzel Cookie Crust, Salted Caramel, Chocolate Ganache, Vanilla Bean Fleur de Sel, & Gourmet Chocolate Truffles

My momma always said, "Life is like a box of chocolates. You never know what you're gonna get." Don't y'all just love the movie, Forrest Gump? It's a Southern classic, and I don't know many people who didn't like it. It has everything that I love about the South... the charm, the scenery, the crazy people you can meet, and the home grown comfort feelin' you get when you watch it. If you haven't seen it, then you're crazy... and need to go and rent it right now!! I especially love that it is filmed partially in Savannah. I mean, the famous bench he sits on in the movie is just one block from my apartment. How cool is that? I think that's why I love Savannah so much, it's just a special city that will always hold a dear place in my heart. I could see myself living here forever, it's pretty much my soulmate. Anyway, on to the food. I have been wanting to make a salted caramel-chocolate ganache tart for a long time. It can honestly make any girl swoon. It's every thing we need to cheer us up or something decadent to enjoy with your loved ones. Well, when we were watching Forrest Gump the other week, I thought to myself, "Man, I wish I could turn a box of chocolates into a real dessert." So, why not combine the two for one monstrous, uber chocolate tart? And that's how the Forrest Gump Tart was born. I started off by making a sweet & salty pretzel cookie crust, and then topped it with a layer of salted caramel and chocolate ganache. After the tart has begin to set slightly, I pressed about 15-20 gourmet chocolate truffles into the ganache. We bought our truffles from our favorite chocolatier, Wright Square Cafe. We included a variety of different flavored chocolate truffles... dark, milk, caramel, coffee, white chocolate, espresso, etc. After the tart has been garnished with the chocolates, I also sprinkled some Vanilla Bean Fleur de Sel on top for an even more salty kick. Because we all know about my obsession with salt on desserts. It's seriously becoming unhealthy at this point. Lemme tell you, every single one of my friends raved about this dessert. I had four people immediately requesting that the recipe be posted on my blog. So, ask and you shall receive!! This would be a great dessert for a small dinner party with your couples friends, a girls night, or a home-cooked dinner date with your man. But, I especially think this would be absolutely perfect for a romantic Valentine's Day dinner. It's not the easiest dessert to make because I know some people struggle with making caramel, but I'm confident y'all can pull it off as well! It's also something you can assemble the morning of, and then just slice after dinner. Ladies, make sure to remember this tart in a couple weeks for Valentine's Day coming up, your man would love it!! Enjoy :)
The Perfect Sweet + Salty Dessert
For the Pretzel Cookie Crust:
8T + 4T Unsalted Butter, 8T at Room Temperature & 4T Melted
1/3C + 1T Light Brown Sugar, Packed
3T Sugar
1 Egg Yolk
½C AP Flour
1½C Pretzels (crushed into the size of small peas or old-fashioned rolled oats)
1/8t Baking Powder
Pinch of Baking Soda
½t + ¼t Salt

For the Salted Caramel Layer:
1 ½C Sugar
3T Light Corn Syrup
¼t Salt
6T Unsalted Butter
6T Heavy Cream
1T Crème Fraiche 

For the Chocolate Ganache Layer:
½C Heavy Cream
4oz Bittersweet Chocolate, Finely Chopped

For the Tart:
Prepared Pretzel Cookie Crust
Prepared Salted Caramel Layer
Vanilla Bean Fleur de Sel, For Sprinkling
Gourmet Chocolate Truffles, For Topping (we went to our local bakery and bought them)

Directions:
1. For the Pretzel Cookie Crust: Preheat oven to 350°F. Line a baking sheet with parchment paper and spray with Pam. In the bowl of a standing mixer, combine 8T room temperature butter, 1/3C light brown sugar, and sugar in medium bowl. Beat the mixture until light and fluffy, occasionally scraping down sides of bowl, about 2 minutes. Add egg yolk; beat until pale and fluffy. Add in the pretzel pieces, flour, baking powder, baking soda, and salt and beat until well blended, about 1 minute. Turn the pretzel cookie mixture out onto prepared baking sheet; press out evenly to almost the edges of pan. Bake until light golden on top, 15-18 minutes. Transfer baking pan to rack and cool cookie completely. Using hands, crumble oat cookie into a food processor and process until it becomes wet sand, and then add melted butter, salt, and brown sugar. Pulse until mixture is moist enough to stick together. Transfer cookie crust mixture to two 9-inch-diameter glass pie dishes. Using fingers, press mixture evenly onto bottom and up sides of pie dishes. Place pie dishes with crust on rimmed baking sheet.
2. For the Salted Caramel Layer: In a deep saucepan, whisk together the sugar, corn syrup, salt, and water and bring the mixture to a boil. Cook, without stirring, until the temperature reads 340 degrees. Remove the pan from the heat and whisk in the butter cream, and crème fraiche and whisk until smooth (the mixture will bubble up). Pour the tart into the prepared pretzel cooking crust. Let it cool to room temperature, and then refrigerate until firm, about 45 minutes to an hour.
3. For the Ganache Layer: Bring the cream to a boil in a deep pot over medium eat. Put the chocolate into a mixing bowl and pour the hot cream over the chocolate. Let it sit 1-2 minutes, and then stir slowly with a rubber spatula or a whisk. Pour the ganache evenly over the chilled salted caramel layer and refrigerate for roughly 15-30 minutes or until the chocolate has cooled some, but has enough give to gently push the gourmet chocolate truffles, so that they will adhere to the tart itself, instead of falling off. Once the truffles have been added, and then return the tart to refrigerator for at least 30 minutes or until all of the layers have set.
4. For Serving: Sprinkle the top of the tart with some vanilla bean fleur de sel, cut into slices, and enjoy while it is still chilled.

with Salted Caramel Sauce + Candied Bacon
Apple Fritters bring up a lot of memories of my childhood. I actually have never had any other apple fritter recipe besides the ones I was made by my uncle on his farm in the mountains of Georgia. Back then, I dreaded going to his farm because it barely had any electricity and more importantly, no TV to watch. Now, I wish I could go back... it's so funny how you change so much. I would so enjoy to go back and have some of his homemade goat cheese or use his homemade shampoos, lotions, and soap when taking a hot shower. But, what I miss most, were those apple fritters that he fried up for breakfast every morning. The best part was running out to his apple tree and picking the ones that we would end up frying. There was something so comforting about watching him spoon a delicate batter into a hot cast-iron skillet, the popping & sizzling played like a symphony, and the grand finale was shoving a huge fork full of crispy dough into my mouth. This recipe is not his, but it is my little gourmet on a Southern classic. With the use of cider beer, cornstarch, stiff egg whites, and Panko crumbs, these fritters are seriously crunchy and oh-so-delicious. And don't worry, they are just as comforting as the ones your mama made. The Panko are really the key in texture, so don't leave them out!! I also had to put my own little spin on it, of course, by coating them a cinnamon-sugar, drizzling the whole plate with some salted caramel, and topping the apple fritter stack with a big ole' pile of candied bacon. I just love the combination of bacon + apples together, so why not add them to this traditional breakfast treat? I mean, you probably would make some bacon as a side to enjoy with it, so it's time to just throw them on top, people!! All of these fritters were gobbled up so fast I couldn't make them quick enough. I really think you'll enjoy the sweet & salty flavors, along with the smoky notes the bacon provides. Enjoy :)


For the Cider Beer Batter:
2/3C Cider Beer
2 Large Eggs, Separated
2T Brown Butter, Melted
3T Sugar
¾t Ground Ginger & Cinnamon
¼t Grated Nutmeg & Ground Allspice
¼t Salt (heaping)
1C AP Flour
1T Cornstarch

For the Apple Fritter Rings:
3 Peeled Apples, Cut into Slices & Cored (we used Granny Smith apples)
Prepared Cider Beer Batter
Panko Breadcrumbs
Vegetable Oil, For Frying (or you can be crazy and fry them in bacon fat)
Prepared Cinnamon Sugar, For Coating

For the Cinnamon Sugar:
1C Sugar
2T Cinnamon
Pinch of Salt

For the Candied Bacon:
8 Strips Of Thick Applewood Smoked Bacon
2t Light Brown Sugar (per slice of bacon)

For Serving:
Apple Fritter Rings, Fried until Crispy & Coated in Cinnamon-Sugar
Salted Caramel Sauce, For Drizzling
Candied Bacon, Diced into Cubes

Directions:
1. For the Cider Beer Batter: Whisk the beer, egg yolks, melted butter, sugar, ginger, cinnamon, nutmeg, allspice, and salt together in a medium bowl. Whisk the flour and cornstarch in until just blended. Cover the bowl with a kitchen towel and let the batter sit for 30 minutes.
2. For the Apple Fritter Rings: Peel and core the apples, or if you don’t have a proper corer, just peel the apples. Slice the apples along latitudinal lines into ½inch thick slices. If you don’t have a corer, now is when you can use a round cutter to punch out the core of each slice. Set the slices on paper towels to drain excess moisture. Flip them over after a few minutes. Heat an inch of vegetable oil in a deep and wide pan or a deep-fat fryer to 365°F. Beat the egg whites to stiff peaks (but not dry – dry is when it looks clumpy) and fold the whites into the batter. You can preheat your oven to 250°F for keeping the fritters warm as you will have to fry them in batches. Dip each apple ring into the batter to coat, and then let any excess drip off before coating them in the panko breadcrumbs (this will be kind of messy, but try your best to cover the wet batter with the breadcrumbs, and then quickly drop them into the hot oil). Once they are completed crusted in panko, carefully place it in the hot oil and fry for a few minutes on each side. When the bottoms turn a deep golden color, use tongs or chopsticks to flip the fritters over. Let the other side turn deep golden and remove from the oil to the cooling rack or paper towels. Repeat until done (store the cooked fritters in the oven if you like). When the fritters are still slightly hot, place them into the bowl of cinnamon-sugar and toss to completely coat.
3. For the Cinnamon-Sugar: Combine the sugar, cinnamon, and a pinch of salt in a bowl and whisk to combine. Once you fry the fritters, let some of the excess oil drip off, and then toss them completely in the cinnamon-sugar until coated.
4. For the Candied Bacon: Preheat the oven to 400 degrees. Lay the strips of bacon on a baking sheet lined with a silicone mat. Sprinkle each slice of bacon with 2t of brown sugar. Bake for 12-16 minutes. Midway, flip the bacon over and drag them through the dark, syrupy liquid that’s collected on the baking sheet. Continue to bake until it is as dark as mahogany. Remove from the oven and cool the strips on a wire rack. Once the bacon is cool and crisp, chop into cubes.
5. For Serving: Stack the crispy, cinnamon-sugar coated apple fritter rings onto the center of a plate. Drizzle the plate and fritters with some homemade salted caramel sauce and sprinkle the candied bacon all over the pate and mound some more on top of the fritter stack. Enjoy immediately while they are still hot!
