Farmer's Market Finds: The Best Damn Deviled Egg Salad Sandwich with Crispy Prosciutto, Peppery Arugula, Soft Herbs, + Sriracha Powder on Buttered White Bread

As long as I can remember, I have never liked deviled eggs or egg salad sandwiches. However, that was all changed when we went to our favorite restaurant, JCT Kitchen, and we ordered some of their famous deviled eggs with country ham. I've made and posted their recipe here (with my own little twist) and they were fab. So I thought, why not turn them into a deviled egg sandwich? Now to make this sandwich even better, I used my favorite items that I found at our local farmer's market. This baby arugula is to die for... if you're in the local Atlanta area, stop by the Peachtree Road Farmer's Market and buy some of this arugula from Abundant Harvest Gardens. We normally have to buy two bags every Saturday, one to cook with and one to snack on during the ride home. I don't think I can adequately describe the flavor of these greens. It is nothing like the arugula you buy at the grocery store that is sorta peppery... this shit is straight up wasabi. I literally can't rave about it enough. I'm also in love with this bread. It's from another vendor at the farmer's market, TGM Bread. But anyway, back to this sandwich... you start by boiling a dozen of eggs until they are just cooked through. In the bowl of a standing mixer, beat together the yellow egg yolks, homemade mayo or aioli, softened goat cheese, minced cornichons + shallots, dijon mustard, white balsamic reduction, and a whole mess of fresh herbs (chives, tarragon, basil, and parsley to be exact). Then all you have to do is fold in the diced up egg whites and season with salt + pepper. The one component left, that really takes this recipe over the top, is the crispy prosciutto. I've had all different kinds of egg salad sandwiches, most of them had bacon them, and it just didn't taste quite right. I love the flavor of the country ham/prosciutto on JCT's deviled eggs, so I thought that would be perfect on a sandwich. But, one thing that had to be changed was the texture. This was easily solved by baking some prosciutto until the fat rendered and began to crisp up. Essentially, because it is so thinly sliced, the meat practically melts on your tongue, so that you have delicious-porky-goodness with each bite. All that you have to do is assemble the sandwiches. Get your gorgeous loaf of white bread and fry it in some butter until golden brown + toasted. Next, you slather on a thick heap of that herbed egg salad, followed by a sprinkling of homemade sriracha powder. Finally, you just lay on some slices of that crispy prosciutto and a mound of those spicy arugula greens. The only thing left to do is to devour it. And trust me, that is the easiest and yummiest part of the recipe! Enjoy :)








For the Crispy Prosciutto:
6oz Thinly Sliced Prosciutto
EVOO, For Brushing
3-4 Sprigs of Fresh Rosemary
Fresh Cracked Pepper

For the Herbed Egg Salad:
12 Extra Large Eggs
¼C + 1T Homemade Aioli
3 Cornichons, Finely Minced
1 Small Shallot, Minced
2T Goat Cheese, Room Temperature
2t Dijon Mustard
1T White Balsamic Reduction (honey may be substituted if needed)
2T Fresh Chives, Snipped
1T Fresh Tarragon, Minced
2t Fresh Basil, Minced
1t Fresh Parsley, Minced
Kosher + Fresh Cracked Pepper, To Taste

For the Deviled Egg Salad Sandwiches:
Prepared Crispy Prosciutto Slices
Prepared Herbed Egg Salad
Fresh Baby Arugula
Homemade Sriracha Powder, For Sprinkling
Buttered, Toasted Slices of White Bread


Directions:
1. For the Crispy Prosciutto: Preheat the oven to 375 degrees and line two baking sheets with parchment paper. Divide the prosciutto evenly between both baking sheets, making sure to lay them flat. Brush the tops of the prosciutto with some EVOO and scatter the fresh sprigs of rosemary on top. Bake the prosciutto until the fat turns golden and the meat is darker in color. This will take about 15 minutes (making sure to rotate baking sheets from top to bottom halfway through the baking time). Using tongs, carefully transfer the prosciutto to paper towels to drain (it will continue tot crisp as it cools). Set them aside until you are ready to assemble the sandwich. 
2. For the Herbed Egg Salad: In a large pot, cover the eggs with cold water and bring them to a boil over high heat. Remove from the heat and let the eggs stand in the hot water for 10-12 minutes. Transfer the eggs to an ice water bath until chilled, about 5-10 minutes. In the bowl of a standing mixer that is fitted with the whisk attachment, mix together the aioli, minced cornichons, goat cheese, Dijon mustard, white balsamic reduction, and minced shallots. Peel the eggs and slice them in half, and then scoop out the yellow egg yolk. On a cutting board, dice up the egg whites into bite size pieces and set them aside. Add the yolks to the bowl of aioli; beat this mixture until it is light and fluffy. Gently fold in the diced egg whites and herbs into the whipped egg yolk-aioli mixture. Finally, season with salt and pepper to taste. Place the egg salad in the refrigerator until you are ready to assemble your sandwich.
3. Assembling the Sandwiches: In a small sauté pan, toast your bread in a little bit of butter until it is golden brown. Remove the bread from the heat and allow it to cool slightly. Top one slice of the bread with the herbed egg salad, a sprinkle of Sriracha powder, a few strips of crispy prosciutto, and a pile of fresh baby arugula, followed by the other slice of bread. Enjoy while the arugula is still crisp!

"Pizza Polenta" with Creamy Parmesan Polenta, Homemade Brown Butter Rainbow Baby Heirloom Tomato Sauce, Crispy Pepperoni, a Drizzle of Gremolata Pesto, Burrata, + Fresh Basil

Okay, so I promised a couple days ago to feature a recipe that uses my favorite go-to Homemade Brown Butter Rainbow Baby Heirloom Tomato Sauce as a main component. And well, I think y'all are gonna really love this one because we sure did! Now the whole concept of this dish is to make a hearty bowl of polenta that tastes like a slice of fancy pizza. It starts with a big ole serving of my creamy parmesan polenta. This polenta is so versatile that you can eat it at breakfast, lunch, or dinner. We make it at least once a week, it's that good. Anyway, on top of that dreamy porridge pillow comes a few ladles of that tomato sauce I've been raving about lately. The sauce has that perfect bite of acidity and sweetness that the tomato lends to the meal as a whole. Then comes the crispy pepperoni, which has texture. Now, I don't want y'all to go out and buy slices of pepperoni and just throw it on there because that just won't do. Go to the store, grab a log of pepperoni, and cut it into thick cubes, toss it into a skillet with a little bit of butter, and crisp it up until it has a gorgeous char to it. Next, I came up with a little mash-up of what I like to call "Gremolata Pesto", which is just mix of all of the ingredients from a traditional gremolata and a classic pesto. I have always loved the lemon zest that goes in a gremolata, it brings such brightness to any dish to put it on. And this condiment does just that in such a considerably rich recipe. I can't wait to drizzle it on my next homemade pizza or over some spaghetti + meatballs. Lastly and most importantly, like any good piece of pizza, you need some good mozzarella. Now, not any kind of mozzarella would do, so I quickly grabbed some Burrata while I was at the store. When you plop one of those ever-so-creamy Burrata balls into the center of the piping hot parmesan polenta and tomato sauce, the heat begins to melt the thin layer of cheese on the outside and the heavenly filling will begin to ooze out into the bowl. You meet heaven, heaven greets you and welcomes you inside, you can die happy now, rest assured. Garnish the dish with some fresh basil and a sprinkling of red pepper flakes, and this bad boy is ready to go. I know y'all will enjoy this bowl of goodness just as much as we did!! Enjoy :)






Oh you know you want a bite of this...
For the Parmesan Polenta:
4C Unsalted Chicken Stock (Homemade or Store-Bought)
2 Large Cloves of Garlic, Minced
1C Stone-Ground Cornmeal
1T Kosher Salt + 1t Fresh Cracked Pepper
1C Freshly Grated Parmesan
4oz Creamy Fontina Cheese, Shredded
¼C Crème Fraiche or Sour Cream
4T Unsalted Butter
¼-½C Heavy Cream or Milk (to thin it out to your desired thickness)

For the Gremolata Pesto:
1 Small Bunch of Fresh Parsley
1 Small Bunch of Fresh Basil
2 Cloves of Garlic, Minced into a Paste (with a little fleur de sel)
2 Organic Lemons, Zested
½C Freshly Grated Parmesan Cheese
½C Walnuts, Finely Minced
Kosher Salt + Fresh Cracked Pepper, To Taste
½C EVOO
1T White Balsamic Reduction (honey may be substituted)

For the Pizza Polenta:
Prepared Parmesan Polenta
1 Batch of Homemade Brown Butter Baby Heirloom Tomato Sauce, Warm
8oz Pepperoni, Cut into Cubes & Cooked until Crispy
Prepared Gremolata Pesto, For Drizzling
Balls of Burrata
Fresh Basil, For Garnishing
Red Pepper Flakes, For Sprinkling

Directions:
1. For the Parmesan Polenta: In a large pot, pour in the chicken stock and add in the minced garlic. Cook over medium-high heat until the stock comes to a boil. Reduce to heat to medium-low and very slowly whisk in the cornmeal, whisking constantly to make sure there are no lumps. Switch to a wooden spoon and add in kosher salt and fresh cracked pepper. Simmer, while stirring constantly, for 10-12 minutes or until they are thick. Be sure to scrape the bottom of the pan thoroughly while you’re stirring. Move the pan off the heat and mix in the freshly grated Parmesan, shredded fontina cheese, crème fraiche, butter, and fresh herbs. If this mixture becomes to thick (either by overcooking and allowing it to sit too long), stir in some of the heavy cream/milk to loosen it again. Taste for seasonings and serve it immediately.
2. For the Gremolata Pesto: Finely mince the basil, parsley, garlic, and walnuts and place into a small mixing bowl. Using a Microplane, grate the Parmesan cheese and lemon zest in next. Stir in the olive oil and white balsamic reduction. Season with salt and pepper to taste. Set it aside until you are ready to drizzle it on top of the dish.
3. In a small sauté pan, heat 1T of butter over medium-low heat. Add in the pepperoni and brown them until they are beginning to crisp up on the outside. This will take about 5-10 minutes. While the pepperoni is cooking, heat up a batch of your homemade Brown Butter Baby Heirloom Tomato Sauce in a small pot.
4. Assembling the Dish: Ladle in a few scoops of the Parmesan Polenta into a serving bowl, followed by some of the tomato sauce, burrata, some of the crispy pepperoni, a drizzle of Gremolata Pesto, chiffonade basil, and red pepper flakes. Serve while the dish is still piping hot!

Herbed, Roasted Chicken Salad Fresh Raspberries, Crumbled Gorgonzola, Praline Pecans, Chopped Fuji Apple, Shaved Red Onion, Spring Lettuce Mix, + Creamy Poppy Seed Dressing

Springtime is quickly approaching the South, y'all. This can only mean that I can enjoy the weather outside on our porch for hours on end, go to the local farmer's market, and make yummy meals that are so fresh that they don't weigh you down. It's truly a gorgeous sight to see when all of Buckhead's flowers begin to bloom and I can actually enjoy it with the top down of my convertible. So when we went to the grocery store yesterday, we were craving something light and refreshing, and ultimately a salad is what we decided on. It begins with herbed, roasted chicken that is unbelievably moist. The rest of the recipe is easy-peasy. You just add all of the ingredients into a large salad bowl and toss it together. I love the balance of flavor that you get when adding fruit and cheese... one is slightly acidic + sweet while the other is creamy + salty. Raspberries and Gorgonzola just seems to be a match made in heaven, quite honestly. And hey, all cheese pairs beautifully with apples as well. But the other ingredients play their part as well, the thinly shaved red onion gives the dish a pop, the praline pecans give it some crunch, and the spring lettuce mix just soaks all of that goodness up. I love to pair creamy poppy seed dressing with any kind of fruit salad, so I made a classic recipe that is boosted up with some garlic, lemon zest, and white balsamic reduction. Really all you have to do is toss the salad together and enjoy :)

For the Herbed, Roasted Chicken:
2 Skin-On, Bone-In Chicken Breasts
2T Dried Herbs (we used a mixture of basil, thyme, oregano, & cilantro)
2T Olive Oil
Salt & Pepper, To Taste
2-3T White Balsamic Reduction
¼C Fresh Herbs (we used a mixture of basil, thyme, parsley, & oregano
¼t Dried Red Pepper Flakes

For the Creamy Poppy Seed Dressing:
¾C Mayo
¼C Buttermilk or Heavy Cream (you can add a little more or a little less if you want it thicker)
3T White Balsamic Reduction
6T Sugar
8t Apple Cider Vinegar
1 Lemon, Zested
1 Garlic Clove, Finely Grated using a Microplane
4t Poppy Seeds
Kosher Salt + Fresh Cracked Pepper, To Taste

For the Salad:
Prepared Herbed Roasted Chicken, Pulled into Pieces
6oz Spring Lettuce Mix
8oz Fresh Raspberries
1C Praline Pecans (roughly chopped)
½C Crumbled Gorgonzola
½ of a Red Onion, Thinly Shaved or Sliced
1 Fuji Apple, Diced
Prepared Poppy Seed Dressing

Directions:
1. Preheat the oven to 350 degrees and line a baking sheet with tinfoil and spray with Pam.
2. For the Herbed, Roasted Chicken: Start off by washing and drying the chicken breasts and then toss them in the mixed dried herbs, olive oil, salt, and pepper. Roast the chicken breasts in the prepared pan in the oven at 350 degrees for 35-45 minutes. Once they have cooled, discard the skin, remove the meat from the bones, and pull the chicken into bite size pieces by hand. Place the pulled chicken into a small mixing bowl and toss it with the white balsamic reduction, fresh herbs, and dried red pepper flakes. Season it to taste with more salt and pepper if needed. Set the chicken aside while you assemble the salad.
3. For the Creamy Poppy Seed Dressing: Put the mayo into a mixing bowl and whisk until it is smooth with no lumps remaining. Slowly drizzle in the milk, whisking to combine; until you have reached you desired thickness. Finely grate a lemon for its’ zest and a large clove of garlic using a Microplane, and add it into the mayo mixture. Stir in the remaining ingredients and season to your liking. Set aside while you make the salad.
4. For the Salad: In a large salad bowl, add in the spring mix, fresh raspberries, chopped praline pecans, crumbled Gorgonzola, shaved red onion, diced Fuji apple, and herbed roasted chicken. Toss those ingredients together until they are evenly distributed throughout the spring lettuce mix. Lastly you can either add the dressing, and then coat the entire salad with the dressing or you can serve the salads individually and drizzle the dressing over the top of each portion.

Caramelized-In-Bacon-Fat Peaches with Bleu Cheese, Serrano Ham, White Balsamic Reduction Drizzle, + Fresh Herbs

It's peach season, y'all! And thank gawd for that. Ripe peaches are practically religion down in the southeast. We use them for just about anything... cobblers, salads, on crostini, flavored lemonade, infused sweet tea, as toppings on pizza, and even in a savory capacity, like these caramelized peaches. It is the perfect side dish during the summer. What makes this recipe so mouth-watering? Well, let's just start from the beginning... they are caramelized in bacon fat (another southern staple), and then finished in the oven where they are caramelized with sugar and scented with fresh rosemary. After they achieve the dark, caramel-y color that you desire, you take them out of the oven and start assembling these sort-of-kinda "peach salads". Drizzle the tops of the caramelized peaches with some of the sweet + sticky + tangy white balsamic reduction. Now onto the matter of the bleu cheese... any kind will really do, but I especially like a soft, silky bleu cheese that will soften some while they sit on top of the warm peaches. Don't like bleu cheese, that's fine too! I'm sure that a creamy goat cheese would be a lovely compliment to the other ingredients! So spoon that sticky, yet delicious cheese into the center of the fruit and pile on a heap of shaved serrano ham. If you can't find serrano, prosciutto or country ham would work just fine as well! I love to finish these bad boys off with a little bit of fresh basil + minced chives because it gives the dish some herby elements that counteract all the sweetness and savoriness that is going on in the dish. We served our peaches with a pepper jelly glazed, BBQ rubbed, grilled pork tenderloin (I will post the recipe for that soon), and it was the perfect compliment to the hearty meat. I think this would absolute perfection for a dinner party with friends or just to whip up on a sunny weekday!! Enjoy :)




For the White Balsamic Reduction:
¼C White Balsamic Vinegar
1T Honey

For the Caramelized Peaches:
2T Rendered Bacon Fat
4 Large, Semi-Ripe Peaches (cut in half + remove the pit)
1T Granulated Sugar + 1T Light Brown Sugar
¼t Smoked Sea Salt
Fresh Cracked Black Pepper
4 Sprigs of Fresh Rosemary

For Topping the Peaches:
1t of Bleu Cheese (per peach half… we had about 8 halves)
Shaved Serrano Ham (country ham or prosciutto may be substituted)
Fresh Basil + Chives, Minced
Red Pepper Flakes, For Garnishing

Directions:
1. Preheat oven to 450 degrees F. In a bowl, mix together the sugars.
2. For the White Balsamic Reduction: Add the white balsamic vinegar and honey to a small saucepan and cook to reduce for 5-10 minutes, or until thick and syrupy. Set this aside until ready to use.
3. For the Caramelized Peaches: Heat a large oven-safe skillet over medium-high heat and add the rendered bacon fat. Once melted, reduce heat to medium-low. Sprinkle the cut-side up of peaches with half of the sugar mixture, the salt and the pepper. Place them cut-side done in the skillet, tucking the rosemary in between. Cook for 5 minutes, or until cut sides are caramelized and golden. Sprinkle the remaining sugar on the un-cut side of the peaches. Drizzle a bit of bacon grease (1-2 teaspoons) over the peaches, then place in the oven and roast for 10 minutes. Remove from the oven and flip the peaches so they are cut-side up. Roast for another 5-10 minutes, until soft and fragrant. Remove from the oven and serve immediately, discarding the rosemary.
4. Assembling the Peaches: Place the caramelized peach halves onto a plate and put a piece of blue cheese into the center, followed by a drizzle of white balsamic reduction and a mound of shaved serrano. Garnish the top with fresh basil and chives, along with a sprinkle of red pepper flakes and some more balsamic reduction. Enjoy with a glass of white wine.

Copycat Recipe: Zoe’s Kitchen Protein Power Plate with Greek Yogurt Marinated Grilled Chicken, Greek Feta Coleslaw, + Caramelized Onions

Some of my fondest memories come from my days at the University of Alabama, well y'all probably already know that, haha. And one of our favorite places to get a quick + healthy lunch was at Zoe's Kitchen. Our go-to meal was their Protein Power Plate. It's fabulous, fresh, and doesn't weigh you down the rest of the day. Their dish consists of a greek vinaigrette feta coleslaw that is topped with grilled chicken and a mound of luscious, sweet caramelized onions. It seriously was the perfect way to start the day, or end the night really. And for a while now, I have been wanting to recreate it myself at home. Because I mean, look at its' components... it should be a breeze. I found a great recipe for greek yogurt marinated grilled chicken, and honestly I can't wait to make it over + over again. It would be great on tacos, in other salads, or just as a main entree. It blackens nicely on the grill, yet retains the moisture from the greek yogurt marinade. For a little extra sweetness, I drizzled my grilled chicken with a little white balsamic reduction-- and it was perfection. Who doesn't like tangy + sweet?! You can make your own reduction at home or you can pick up a handy-dandy store-bought brand at the grocery store. It's as simple as that! The coleslaw is heavy on the onions, which we love, but if you're not so into that... then feel free to not use the red onions. The vinaigrette recipe makes a big batch, so only use enough to lightly coat the coleslaw. You don't want it soggy or drowned in a bunch of liquid. And don't skimp on the feta because it adds a nice saltiness and creaminess to the coleslaw. All you have left to do is caramelize a shit-ton of onions (the more the better, in our humble opinion). Then, just load it into a big bowl and drizzle a little more reduction, as well as some extra crumbled feta... and dinner is served!! I can see this meal becoming a weekly tradition for us, that's how much we liked it!! Enjoy :)







For the Greek Yogurt Marinated Grilled Chicken:
16oz Greek Yogurt (try to use a thick yogurt)
2-inch Piece of Fresh Ginger, Peeled & Grated
4 Cloves of Garlic, Minced into a Paste with Salt
1t Ground Cumin, Red Chile Flakes, Kosher Salt, Pepper, & Greek Seasoning
½t Dried Oregano
2-4T Sugar (depending on how much sweetness you like)
1 Lemon, Juiced + Zested
4 Bone-in, Skin-on Chicken Breasts
Extra Virgin Olive Oil (for greasing the grill)
White Balsamic Reduction, For Drizzling

For the Greek Vinaigrette:
½C Red Wine Vinegar
¼C Honey or Agave Syrup
3 Garlic Cloves, Minced
1T Fresh Basil, Minced
1t Fresh Oregano, Minced
½t Dried Marjoram
1t Red Pepper Flakes
1 Lemon, Juiced + Zested
¾C Extra Virgin Olive Oil
Salt & Pepper, To Taste  

For the Greek Feta Coleslaw:
2 Bags of Shredded Angel Hair Coleslaw (the thinly shaved kind)
¼ Red Onion, Shaved
¼C Fresh Parsley, Chopped
1 Small Handful of Fresh Oregano, Chopped
8oz Crumbled Feta Cheese
6 Green Onions, Thinly Sliced
¼C Minced Chives
Prepared Greek Vinaigrette (to taste, as little or as much as you want)

For Serving:
Caramelized Onions
Crumbled Feta
Minced Chives
White Balsamic Reduction

Directions:
1. Marinating the Chicken: In a small bowl, combine yogurt, ginger, garlic, cumin, chile flakes, salt and lemon. Whisk until smooth and pour into a baking dish. Place the chicken breasts in the yogurt mixture and cover with plastic wrap and refrigerate for a couple of hours or up to a day to marinate.
2. Grilling the Chicken: When ready to grill, heat a very clean grill to medium. When the grill is hot, brush with the oil and place chicken on the grill, skin side down. Cook until the skin is brown and crispy, about 5 minutes, and then flip. Cook another 5-10 minutes, covered, until chicken is fully cooked. Remove chicken from grill and let rest 5-10 minutes before pulling meat off the bone and shredding or slicing it. Drizzle the chicken with some White Balsamic Reduction.
3. For the Greek Vinaigrette: Combine first 8 ingredients in a medium bowl. Slowly whisk in oil until blended. Season with salt and pepper. Keep refrigerated in an airtight container for up to 1 week.
4. For the Greek Coleslaw: Combine all ingredients in large mixing bowl thoroughly. Let sit in refrigerator for at least an hour. Add in some of the prepared Greek Vinaigrette (just enough to coat the coleslaw, but not drown it and make it soggy). Taste for seasoning and adjust if necessary. Serve cold.
5. For Serving: Spoon some of the Greek coleslaw into a bowl and top it with some grilled chicken. Garnish with a pile of caramelized onions, crumbled feta, minced chives, and a little drizzle of more white balsamic reduction. Enjoy.
