Asian Chicken Lettuce Wraps with Sweet + Salty Sauce

We've been on a real Asian kick this week when it comes to cooking dinner. Sometime in the next few days, I'll post my Garlicky Korean Beef Noodles, which have become a weekly meal for the last 6 months. But today, we're going to talk about chicken lettuce wraps. Lettuce wraps are a must for me whenever we go out to a restaurant, so why not make my own version at home? This recipe is pretty easy when it comes to cooking other dishes on my food blog, although you will do a lot of chopping. But if you have another person helping you, y'all will be done in no time! I started off by making my go-to sweet + salty sauce (that also goes on the Korean Beef Noodles) and all you have to worry about is bring it to a boil, reducing it to a simmer, whisking continuously, and letting it cool. You'll repeat that cooking process 3-4 times until the sauce is smooth and has reduced slightly. After you have done that, just let the sauce cool in the small pot until you are ready to pour it over the chicken. Now, I have a pretty firm belief that everyone likes chicken, but if you are that one person who doesn't, then just trade out the ground chicken for ground pork and ground beef. Now let's talk about all the vegetables. We were recently eating out at one of our favorite thai restaurants and they have the most glorious chicken lettuce wraps. Something a little different that they include are red + green bell peppers. Both my husband and I enjoyed that addition so much, that I had to put some peppers into my chicken-vegetable mixture. It is important though, that you dice up the sweet onions and bell peppers to the same size, so that they will all cook for the same time. Once those vegetables have become slightly softened and somewhat translucent, throw in the minced fresh garlic, diced water chestnuts, minced green onions, fresh basil, minced dried garlic, toasted sesame seeds, toasted sesame oil, and some red pepper flakes. Stir it all together and let it cook for a minute or two. Now, all that is left to do is to pour some of the sauce over the chicken mixture until everything is coated. I would suggest starting with half the sauce and working your way up because you don't want an overwhelmingly large amount drowning your chicken + veggies. The goal here is to add just the right amount of sauce to your liking, that way the chicken lettuce wraps taste light and delicious. All that there is left to do is to assemble them. Get a piece of butter lettuce, spoon in some of the sauced chicken mixture on top, drizzle with a little bit of extra sauce, and garnish with a pinch of minced, dried garlic, red pepper flakes, and toasted crushed peanuts. Voila, you have made yourself a real crowd pleasing recipe! I hope you enjoy it as much as we do!

For the Sweet + Salty Sauce:
1C Light Brown Sugar
½C Soy Sauce
¼C Hoisin Sauce
2T Toasted Sesame Oil + 2T Sriracha
1T Rice Wine Vinegar
1t Freshly Grated Ginger
1t Red Pepper Flakes (less or more to your preferred spiciness)

For the Asian Chicken Lettuce Wraps:
Prepared Sweet + Salty Sauce
4T Vegetable Oil (separated)
2lbs Ground Chicken
2 Sweet Onions, Diced
1 Red Bell Pepper + 1 Green Pepper, Diced
1t Salt
8oz Sliced Water Chestnuts, Diced
8 Cloves of Garlic, Minced
2 Bunches of Green Onions, Minced
¼C Fresh Basil, Minced
2T Minced Dried Garlic (plus more for garnishing)
1T Toasted Sesame Seeds (plus more for garnishing)
Red Pepper Flakes (to your preferred spiciness)
1T Toasted Sesame Oil
1-2 Butter Head Lettuce
Toasted, Crushed Peanuts, For Garnishing

Directions:
1. For the Sweet + Salty Sauce: In a small pot, whisk together all of the sauce ingredients until it is well incorporated. Bring the sauce to a boil over medium-low heat, making sure to continuously whisk. Reduce to a simmer and cook for another 1-2 minutes. Turn off the heat and let the sauce cool for a few minutes. Repeat this process of bringing it to a boil and simmering the sauce three more times. After you have done this, allow the sauce to cool while you make the chicken lettuce wraps.
2. Cooking the Chicken: Heat 2T oil in a saucepan over medium-high heat. Add in the ground chicken and cook until just browned, about 5-7 minutes. Make sure to crumble the chicken as it cooks, so smaller pieces form. Drain the excess fat out of the pan and set aside the cooked chicken while you sauté the vegetables.
3. Making the Asian Chicken: In a large pot, heat the other 2T of oil over medium-high heat. Add in the diced onions, diced red bell pepper, diced green pepper, and the salt. Sauté these vegetables for about 5-10 minutes, until they have cooked down and gave become translucent. Next, toss in the diced water chestnuts, minced garlic, and minced green onions. Stir everything so that it is all mixed together. Bring the heat up to high and let it cook on that temperature for a minute. Drizzle in half of the reduced sweet + salty sauce, stirring to make sure the lettuce wrap mixture is completely coated in the sauce. Lastly, finish off the dish by throwing in the fresh minced basil, minced dried garlic, toasted sesame seeds, as much or as little red pepper flakes that you like, and toasted sesame oil. Turn off the heat and taste the sauced, ground chicken-vegetable mixture. If you think the chicken needs more sauce, salt, or red pepper flakes, then add it to your liking.
4. Assembling the Chicken Lettuce Wraps: Pull off the individual leaves of butter lettuce and wash and dry them. Place the lettuce leaves onto a plate, and then spoon some of the chicken mixture into each leaf. Garnish the top of the chicken lettuce wraps with a drizzle of the sweet + salty sauce, dried minced garlic, pinch of red pepper flakes, and some toasted, crushed peanuts. Enjoy the lettuce wraps while they are still hot (but they are just as delicious if you serve them cold)!

Saturday Down South: In 'n Out Animal Style Double Bacon Cheeseburger Dip with Mustard Grilled Burger Crumbles, Pan Fried Caramelized Onions, Cubed Dill Pickles, Diced Tomatoes, Crispy Bacon Lardons, + Secret Sauce Drizzle

It's officially the most wonderful time of the year... football season!! I swear my Mountain Man has been counting down the days since we won the national championship last season. Now comes the time of friends, tailgating, fatty food, bonfires, and plenty of booze.

One of the mainstays of our menu is hearty dip, and this recipe that I am featuring today is just that! The inspiration came from a burger joint that is extremely popular in California... In n' Out Burger. Since Alabama is playing USC tomorrow, I thought this would be the perfect time to feature my first (of many) tailgate recipes this year. When you order a burger or fries "animal style", this usually means that it comes with extra secret sauce, caramelized onions, mustard grilled patties, and pickles. So, I started off with a creamy dip base and added mustard grilled burger crumbles, crispy bacon lardons, pan fried caramelized onions, cubed bread n' butter pickles, diced tomatoes, and shredded cheese. After it is baked in the oven until golden brown + delicious, you whip a batch of my not-so-secret secret sauce and drizzle it over the top. At this point, everyone will be salivating, so all that is left to do is serve with some some chips or crackers. I also like to put out some different bowls with burger toppings for extra garnishing... pickles, tomatoes, shredded lettuce, + more sauce. That way, when a friend grabs a chip and some dip, they can sprinkle a little bit of this and a little bit of that on top for the perfect bite! This recipe is super easy, so almost anyone can whip it up, don't y'all worry. I hope y'all love this first recipe of the season!! Enjoy :)

For the Mustard Grilled Burger Crumbles:
1lb 75-25 Ground Chuck
¼C Yellow Mustard
Kosher Salt + Fresh Cracked Pepper, To Taste

2 Large Vidalia Onions, Sliced
4T Unsalted Butter + 2T Vegetable Oil
Kosher Salt, To Taste
¼C Sugar

For the Dip:
8oz Herbed Cream Cheese, Room Temperature
1C Sour Cream
½C Mayo
2C Shredded Cheddar, Split
2C Mozzarella Cheese, Split
1 Garlic Clove, Minced
1-2T Worcestershire Sauce
½t Smoked Paprika, Garlic Powder, & Onion Powder
Kosher Salt + Fresh Cracked Pepper, To Taste
Prepared Mustard Grilled Burger Crumbles
Prepared Pan Fried Caramelized Onions
1 Medium Tomato, Diced
½C Bread n’ Butter Pickles, Diced
Shredded Romaine Lettuce

For the Secret Sauce:
1/3C Mayo
3T Ketchup
1-2T Sweet Pickle Relish
1t Sugar + 1 White Vinegar
¼t Garlic Powder, Onion Powder, + Paprika
Kosher Salt + Fresh Cracked Pepper, To Taste

Directions:
1. Preheat the open to 350 degrees and spray a pan with Pam.
2. For the Mustard Grilled Burger Crumbles: In a large skillet, over medium high heat, brown the ground beef. Pour off any extra fat and stir in the mustard. Season with salt and pepper, and then set it aside.
3. For the Pan Fried Caramelized Onions: Heat the butter and onion in a large sauté pan over medium heat. Add the onions, salt, and pepper and sauté for 10 minutes. Reduce the heat to medium-low and cook, stirring occasionally, for 20 more minutes until the onions are browned and caramelized. Allow the onions to cool.
4. For the Secret Sauce: Mix together all of the ingredients until everything is incorporated. Taste the sauce and adjust to your taste preferences. Set this sauce aside until you want to top the dip with it.
5. For the Dip: Place the cream cheese, sour cream, and mayo in the bowl of an electric mixer, fitted with the paddle attachment, and bet until smooth. Add in 1C each of the shredded cheddar and mozzarella (saving the rest to put on top), followed by the mustard grilled burger crumbles, cooled caramelized onions, minced garlic, Worcestershire, spices, diced tomato, and diced pickles. Season with salt and pepper to taste. Sprinkle the left over cheese on top and bake in the oven for 20-30 minutes until the cheese has melted and begun to brown on top. Remove the dip from the oven and drizzle the secret sauce over the top. Serve with Ritz crackers or potatoes chips, and have a bowl of shredded lettuce on the side to garnish the dip.

Herbed, Roasted Chicken Salad Fresh Raspberries, Crumbled Gorgonzola, Praline Pecans, Chopped Fuji Apple, Shaved Red Onion, Spring Lettuce Mix, + Creamy Poppy Seed Dressing

Springtime is quickly approaching the South, y'all. This can only mean that I can enjoy the weather outside on our porch for hours on end, go to the local farmer's market, and make yummy meals that are so fresh that they don't weigh you down. It's truly a gorgeous sight to see when all of Buckhead's flowers begin to bloom and I can actually enjoy it with the top down of my convertible. So when we went to the grocery store yesterday, we were craving something light and refreshing, and ultimately a salad is what we decided on. It begins with herbed, roasted chicken that is unbelievably moist. The rest of the recipe is easy-peasy. You just add all of the ingredients into a large salad bowl and toss it together. I love the balance of flavor that you get when adding fruit and cheese... one is slightly acidic + sweet while the other is creamy + salty. Raspberries and Gorgonzola just seems to be a match made in heaven, quite honestly. And hey, all cheese pairs beautifully with apples as well. But the other ingredients play their part as well, the thinly shaved red onion gives the dish a pop, the praline pecans give it some crunch, and the spring lettuce mix just soaks all of that goodness up. I love to pair creamy poppy seed dressing with any kind of fruit salad, so I made a classic recipe that is boosted up with some garlic, lemon zest, and white balsamic reduction. Really all you have to do is toss the salad together and enjoy :)

For the Herbed, Roasted Chicken:
2 Skin-On, Bone-In Chicken Breasts
2T Dried Herbs (we used a mixture of basil, thyme, oregano, & cilantro)
2T Olive Oil
Salt & Pepper, To Taste
2-3T White Balsamic Reduction
¼C Fresh Herbs (we used a mixture of basil, thyme, parsley, & oregano
¼t Dried Red Pepper Flakes

For the Creamy Poppy Seed Dressing:
¾C Mayo
¼C Buttermilk or Heavy Cream (you can add a little more or a little less if you want it thicker)
3T White Balsamic Reduction
6T Sugar
8t Apple Cider Vinegar
1 Lemon, Zested
1 Garlic Clove, Finely Grated using a Microplane
4t Poppy Seeds
Kosher Salt + Fresh Cracked Pepper, To Taste

For the Salad:
Prepared Herbed Roasted Chicken, Pulled into Pieces
6oz Spring Lettuce Mix
8oz Fresh Raspberries
1C Praline Pecans (roughly chopped)
½C Crumbled Gorgonzola
½ of a Red Onion, Thinly Shaved or Sliced
1 Fuji Apple, Diced
Prepared Poppy Seed Dressing

Directions:
1. Preheat the oven to 350 degrees and line a baking sheet with tinfoil and spray with Pam.
2. For the Herbed, Roasted Chicken: Start off by washing and drying the chicken breasts and then toss them in the mixed dried herbs, olive oil, salt, and pepper. Roast the chicken breasts in the prepared pan in the oven at 350 degrees for 35-45 minutes. Once they have cooled, discard the skin, remove the meat from the bones, and pull the chicken into bite size pieces by hand. Place the pulled chicken into a small mixing bowl and toss it with the white balsamic reduction, fresh herbs, and dried red pepper flakes. Season it to taste with more salt and pepper if needed. Set the chicken aside while you assemble the salad.
3. For the Creamy Poppy Seed Dressing: Put the mayo into a mixing bowl and whisk until it is smooth with no lumps remaining. Slowly drizzle in the milk, whisking to combine; until you have reached you desired thickness. Finely grate a lemon for its’ zest and a large clove of garlic using a Microplane, and add it into the mayo mixture. Stir in the remaining ingredients and season to your liking. Set aside while you make the salad.
4. For the Salad: In a large salad bowl, add in the spring mix, fresh raspberries, chopped praline pecans, crumbled Gorgonzola, shaved red onion, diced Fuji apple, and herbed roasted chicken. Toss those ingredients together until they are evenly distributed throughout the spring lettuce mix. Lastly you can either add the dressing, and then coat the entire salad with the dressing or you can serve the salads individually and drizzle the dressing over the top of each portion.

Date Night: Steakhouse Salad with Seared Filet Mignon on Mixed Heirloom Greens Tossed in a Maple-Mustard Vinaigrette with Candied Pecans, Dried Cherries, Sliced Apples, Apple Chips, Crumbled Bleu Cheese, & Crispy Shallots, Drizzled with a Red Wine-Balsamic Caramel

Steakhouse Salad with Seared Filet Mignon on Mixed Heirloom Greens Tossed in a Maple-Mustard Vinaigrette with Candied Pecans, Dried Cherries, Sliced Apples, Apple Chips, Crumbled Bleu Cheese, & Crispy Shallots, Drizzled with a Red Wine-Balsamic Caramel
It's been a long, long, longgggggg time since I have last posted a Date Night recipe. And this meal will surely make up for the lost time! As many of you know, I am an avid lover of all salads, my Mountain Man, on the other hand, doesn't get that yearning for a big ole' pile of frilly greens like I do. But, his mind can quickly be changed when a hearty steak is added into the mix. Oh, and crispy fried shallots don't hurt it either. This bad boy of a salad is loaded with a bunch of yummy ingredients... sweet dried cherries, fresh apple slices, crunchy apple chips, crumbled bleu cheese, & candied pecans. The base of it all is a mix between heirloom greens, frisee lettuce, and baby arugula. Then, they are all tossed in my go-to Maple-Mustard Vinaigrette, which perfectly complements the other components of the dish. I like all of the balance of these different greens put together for a lot of variety and then the acidic-sweet dress that is dressed in. Now, here's where it all comes up to you... We love our filet mignons to be crusted in fancy fleur de sel and coarsely ground peppercorns. It is super hearty and extremely flavorful. But, most importantly, we prefer our steaks to be cooked to a bright red medium rare. It has such a deep, complex meatiness that way and it literally just melts into your mouth. But, I know that not everyone feels the same way we do, so please cook your meat according to your preferences. After every thing has been assembled, you have to garnish it off with a heapin' mouthful of crispy shallots. Life don't get much betta than this, y'all!! Enjoy :)

½C Red Wine
1C Balsamic Vinegar
1T Dark Brown Sugar

For the Maple-Mustard Vinaigrette:
2T Olive Oil
2T Apple Cider Vinegar
4T Maple Syrup
2t Dijon Mustard
2T Grainy Mustard
2t Garlic, Minced

For the Candied Pecans:
1 ½C Pecans, Toasted
½C Sugar
Pinch of Salt, Cinnamon, & Cayenne (or to your taste, I did a large pinch)

For the Crispy Shallots:
4 Large Shallots, Thinly Sliced
½C Buttermilk + 2T Hot Sauce
AP Flour, For Coating
Vegetable Oil, For Frying

For the Steakhouse Salad:
Mixed Heirloom Greens, Frisee Lettuce, & Baby Arugula (or your favorite salad greens)
Prepared Maple-Mustard Vinaigrette, For Dressing the Salad
Prepared Candied Pecans, Roughly Chopped
1-2C Dried Cherries
1 Fuji Apple, Thinly Sliced
Apple Chips
Crumbled Bleu Cheese
½C Red Onion, Finely Minced
2T Freshly Parsley, Minced
Seared Filet Mignon, Cooked to your Preference & Sliced
Prepared Red Wine-Balsamic Caramel, For Drizzling
Crispy Shallots, For Garnishing

Directions:
1. For the Red Wine-Balsamic Caramel: Place red wine in a small saucepan and simmer over medium heat until reduced to about 1 tablespoon. Add the balsamic vinegar and boil until the vinegar has reduced to about ¼ cup and is very syrupy and big shiny bubbles are forming at the surface. Watch the mixture very closely at this point — it will burn very easily. If it appears too thin, be assured that it will thicken upon cooling. Remove from the heat and stir in the brown sugar until dissolved. Pour into a clean jar and let it thicken before drizzling over the salad.
2. For the Maple-Mustard Vinaigrette: In a mixing bowl, whisk together all of the ingredients until combined. Season it with salt & pepper to taste. Refrigerate the dressing until ready to toss the salad.
3. For the Candied Pecans: Preheat the oven to 350 degrees and spread the pecans on a baking sheet and bake for 5 minutes until just toasted. Remove from the oven and let it cool. Meanwhile, pour the sugar into a medium saucepan and cook on medium heat, stirring with a wooden spoon while the sugar melts. Keep stirring until the color turns a medium amber color. Once that color is reached, add in the pecans to the pan and quickly stir to coat. As soon as they are coated, spread them onto a baking sheet and sprinkle with the salt, cinnamon, and cayenne. Let them cool completely before adding them to the dish (after they have hardened, you can chose whether or not you want to chop them up or leave them whole).
4. For the Crispy Shallots: In a mixing bowl, whisk together the buttermilk and hot sauce until combined. Add in the thinly shaved shallots and toss them in the spicy milk mixture until they are thoroughly covered. Let these onions soak for roughly an hour. When you are ready to fry, heat some vegetable oil up to 350 degrees. While the oil is heating, drain the shallots from the milk, and then lightly coat them in some AP Flour, shaking well to remove any excess flour. Fry the shallots in the hot oil, in small batches, until they are crispy & golden brown, about 3-5 minutes. Once cooked, strain from the oil onto a paper towel-lined plate and sprinkle with some salt and pepper. Repeat with the remaining shallots. After they have all been fried, set them aside until you are ready to garnish the salad with them.
5. For the Steakhouse Salad: In a large mixing bowl, place the mixed greens and lettuce in a bowl, along with the candied pecans, dried cherries, apple slices, apple chips, crumbled bleu cheese, minced red onion, and parsley. Toss them together until all of the ingredients are incorporated throughout. Next, pour some of the Maple-Mustard Vinaigrette over the salad and gently toss until just combined (don’t overdress the salad or it will be soggy). Lay the slices of the filet mignon on top of the dressed salad, and then generously drizzle some of the Red Wine-Balsamic Caramel over the steak and the salad. Garnish the salad with a big pile of crispy shallots. Enjoy immediately with a big glass of red wine!
